Smashed Potatoes with Dill Sour Cream Topping

  • 1 1.5- lbs package Side Delights Steamables Golden Potatoes
  • 1/4 cup mayonnaise
  • 3/4 cup sour cream
  • 1 teaspoon dried dill weed
  • 1/2 teaspoon garlic powder
  • pinch fine sea salt
  • 1 1/2 Tablespoons olive oil
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper


  • Preheat oven to 450 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper, then take out a 2nd rimmed baking sheet and 2nd piece of parchment paper and set aside.
  • Heat the Side Delights Steamables Golden Potatoes in the microwave per package instructions.
  • While the potatoes are steaming, take a small bowl and combine in it the mayonnaise, sour cream, dill weed, garlic powder, and fine seas salt. Stir well, then cover with plastic wrap and refrigerate.
  • Spread the heated potatoes out on the prepared baking sheet, cover with the 2nd piece of parchment paper, and press down with the 2nd baking sheet, until the potatoes are smushed. Remove the 2nd baking sheet and 2nd sheet of parchment paper.
  • Drizzle olive oil over the potatoes and sprinkle with kosher salt and pepper.
  • Bake for 20-25 minutes, or until browned and crispy.
  • Remove from oven and drop dollops of topping on each potato. Serve immediately.


This makes enough topping for 2 packages of potatoes. You can save leftover topping in an airtight container in the refrigerator for up to 3 days.
