Disclosure: This bountiful brunch of hummus toast is part of a compensated post written on behalf of Sabra. All opinions–as well as my devotion to hummus–remain entirely my own. Thank you for supporting the brands that keep Poet in the Pantry going!
Is there anything better than brunch?
You can’t do better than a lazy, late morning meal where your best friends (and/or family) join you in a gluttonous gorging on whatever you fancy, as long as it’s accompanied by mimosas (keep them coming!) or Bloody Marys. Ah, brunch, you are the queen of all eating occasions.
Restaurant dining adds up fast.
I don’t know about you, but my bank account has been bled dry lately. There’s always some expense that comes up. That doesn’t mean you have to give up your favorite meal! Save a little dough by hosting your own fabulous festivities, and that’ll leave you more money to spend on the booze.
I’m sure by now you’ve seen me wax poetic about the wonders of hummus toast on my Instagram account. (If you haven’t, I recommend checking it out–I have a lot of tasty photos over there) I could eat toast any time of the day anyway. Afternoon? I’m doing British tea. Late night? Sprinkle cinnamon sugar and it’s dessert. Breakfast? Well, of course breakfast. But why limit yourself to the mundane? Give your toast an upgrade with a rich slathering of hummus and some tasty toppings. Your tummy will thank you!
A Brunch for All
For my latest little brunchy get-together, I arranged an assortment of options to tickle my guests’ taste buds. I tried to stick to plant-based toppings, to be friendly to most people’s preferences (although I’m not entirely sure what was in the bakery bread I used). But it’s also super easy to adapt these to different dietary requirements by changing out the bread for gluten-free, adding cheese for a little protein, etc. Heck, you could even make it a hummus toast bar: you provide the toast, and your guests top as they wish from the arrangement of toppings you’ve laid out for them. That’s the great thing about hummus toast: it really can please everyone.

By the way, I highly recommend starting with a high quality hummus, like Sabra. I’ve visited their facilities and they are PRISTINE. Their product is consistent and the flavors are just plain delightful. They’re always coming up with something new and exciting, like the Salsa Verde hummus recently released (wowser, is that a good one!). Sabra may be one of my clients, but I wouldn’t keep working with them if I didn’t believe in what they make.

Southwestern Hummus Toast
- Toast up your favorite bread (I used sourdough here) and slather on original flavor Sabra hummus.
- Sprinkle over the top:
- black beans (rinsed)
- roasted corn
- red onion, chopped
- a dash of chipotle pepper powder
- Garnish with chopped fresh cilantro.
This one is also fabulous with that new Salsa Verde hummus!

Cucumber, Tomato, and Red Onion with Balsamic Glaze
- Toast up your favorite bread (I used sourdough here) and slather on original flavor Sabra hummus.
- Arrange over the top:
- English or mini cucumbers, sliced
- tomatoes, sliced (I went with the ones that are a little bigger than cherry tomatoes)
- red onions, sliced
- Drizzle with balsamic reduction glaze.

Kalamata Olive and Red Pepper
- Toast up your favorite bread (I used sourdough here) and slather on original flavor Sabra hummus.
- Arrange over the top:
- pitted kalamata olives, chopped rough
- fresh red peppers, sliced thin
Looking to go even easier? Spooning some fresh salsa on that hummus toast will pack a punch without any effort. Add some freshly chopped cilantro and you’re good to go!
This is really only just the beginning! Just make sure you have plenty to go around for everyone!
