Disclosure: This recipe for Toffee Chaos Cookie Milkshakes was developed in partnership with Goodie Girl Cookies, who compensated me for this post. All opinions, as always, remain my own.
I am not normally one to seek out gluten-free treats. I don’t have any reason to believe I have a sensitivity. I very much LOVE my pasta. And you can pry my fresh-baked crusty bread from my cold, dead hands. I take my gluten that seriously.
Oddly enough, one of my favorite brands of store-bought cookies right now is gluten-free. I’m a woman of contradictions. The thing is, Goodie Girl Cookies didn’t start out to meet the dietary needs of a family member who had to give up what s/he once loved–they actually began with a dare. And somehow, that makes me love them even more!
Founder Shira Berk had been running the café in her children’s preschool when the challenge was issued: to create a gluten-free cookie that tasted as good as the gluten-filled ones she was already offering. It was no easy challenge. What followed were 17 months of toil–of testing and rewriting and testing again–before she was satisfied with her initial foray into the gluten-free cookie world: quinoa chocolate chip cookies. They were soon a smashing hit and success spurred her on to try her luck again with creating an entire line of cookies that people would want to eat, over and over again.
Lady Luck shined down on her at the Fancy Food Trade Show, where she met Greg Toufayan. Before long, she found herself partnered with the bakery in New Jersey and well on her way to making Goodie Girl Cookies a household name.
Having discovered how marvelous these cookies that brag to have “just the right amount of wrong” are, I’ve now converted my kids, as well. The **only** cookies my kids can take in their school lunches (other than my own homemade) are of the Goodie Girl Cookies variety. The Go Packs make it super easy to send them off with a little treat. And my daughter has taken this as a challenge to sing the praises of gluten-free cookies to her classmates. She’s slowly winning them over, cookie by cookie. It’s quite adorable.
I love a good cookie just about any time, but I was challenged, as well: to create a recipe that would be accented by the addition of Goodie Girl Cookies. I was allowed to choose any variety I wanted, they just had to be somewhat recognizable in the end product. From the start, I focused on Toffee Chaos–my absolute favorite in the line–and the many ways I could feature them. Time and time again I came back to milkshakes… which, once they’re pulverized, doesn’t exactly make the cookies all that recognizable in the end. But with a sprinkling of crumbled cookies on top for a garnish, it’s really quite perfect.
The recipe will fill a pint jar, and while that might seem like a really awesome idea to drink the whole thing, I guarantee that your eyes will be bigger than your stomach here. Split it into two and share the wealth. You could make a new friend this way!
Who knew I could be such an enormous fan of a gluten-free cookie?
