Every week, I try to celebrate Taco Tuesday. And every week, it gets to be Thursday and I think to myself How did this happen? I missed it, again! It’s a silly little thing, but the silly little things are what makes the world spin on and distract us–at least, for a little while–from the everyday stresses and struggles to help keep us trudging along.
I finally did the responsible thing and called my doctor, but with waits for an appointment with him, my planned travels, and waits on appointments with other health care providers to which I’ve been referred, it’s been slow progress. I saw my orthopedist on June 8th, but didn’t get into physical therapy until June 22nd, and finally was measured for a new ankle-foot orthosis yesterday (which I won’t get to try out until July 13th!). I’m trying. But the pain persists.
Still, I’m really good at trudging along, even when all I want to do is crash. I’ve told people for years that I’ll sleep when I die. It’s catching up with me. The first half of my summer is full of exciting projects that I’m very much looking forward to… But I’m also looking forward to the second half of this summer, when I devote myself to spending time with neglected friends and relaxing. I haven’t allowed enough time for it lately. I can’t remember the last time I lounged for an entire afternoon, lost in a good book. Or sat down for drinks with friends, no worries about the next appointment I need to run off to. The scales are out of whack for this Libra.
Luckily, I have some new weeknight meal tricks up my sleeve to help attain balance again!

I need to work on that… These Chorizo Tacos with Sabra Veggie Fusions South-West Guacamole, though? They’ve already reached perfection! Set out the toppings in little bowls and you have your very own taco bar, right there in your kitchen. The kids loved being able to personalize their meal. And me? I loved that they had a little boost of the good stuff, thanks to Veggie Fusions.

Chorizo Tacos with South-Western Guacamole
Ingredients
- 1 pound chorizo I used beef chorizo, but you can use pork, too
- 1 package Sabra Veggie Fusions South-Western guacamole
- 1/2 medium red onion diced
- 1/2 small head red cabbage shredded or sliced
- 1 medium tomato diced
- 6-8 radishes sliced
- 1 package Sabra Pico de Gallo
- 12-24 5- inch white corn tortillas
Instructions
- Heat a large skillet over medium flame and add the chorizo; break it up and cook until slightly crispy and cooked through, stirring frequently. Remove to a paper towel lined plate to drain the excess fat.
- Place the tortillas on a heatproof plate, cover with a damp paper towel, and microwave for 30 seconds. Or heat them over low flame on the stove, holding with tongs and turning often, until warm and slightly charred.
- Spread 1 Tablespoon Sabra Veggie Fusions Southwestern guacamole in the middle of 12 tortillas. Top with chorizo and any of the other toppings prepared. Fold and enjoy.
Just looking at these tacos I get hungry!
