It’s Tuesday, again. One of the most underappreciated days of the week. Monday has its claim to fame as being the reintroduction to the workweek. Wednesday is hump day. But what about Tuesday? The only appropriate solution? Tipsy Tuesday. Which is even better when it can do double duty as Tequila Tuesday, too.
Honestly, I really don’t drink that much. I love liquor–don’t get me wrong–but I consume it in a manner that is almost sickeningly responsible. Most of the time. With the occasional relapse that we will not discuss right now. Because I’m adulting today.
This week is starting out to be quite stressful. Some complicated matters at work. The kids are off from school this week. And, of course, taxes loomed. Taxes.
I started our taxes nearly a month ago, but once I realized we would owe money, I put it aside again with the promise that I would print everything out and resume it…later. A very nebulous later, with no end date in sight. Other than April 15th, of course.
Then yesterday, one of my co-workers joked that I should probably file for an extension. That’s all it took to get my butt in gear. I printed off the remaining documents. Pored over them for hours, making sure I tracked everything. And at nearly 2AM, I submitted our 2015 state and federal taxes. Look at that! I didn’t even wait til the last minute!
This calls for a celebration! I LOVE tequila. Blame it on my BFF who went Paleo for a while and we skirted it with tequila–the only “Paleo-friendly” (and those are intentional quotes there) liquor. I grew to love it under her restrictions and have complained often that there aren’t enough tequila-based cocktails in the world. So I added one to it. Because that’s the responsible thing to do, right?

Raspberry Pineapple Tequila Cocktail
Ingredients
- ice
- 2 ounces silver tequila
- 1 1/2 ounces raspberry liqueur
- 2 ounces pineapple juice
Instructions
- Fill rocks glass with ice.
- Pour tequila, raspberry liqueur, and pineapple juice over the ice.
- Enjoy!
