Every year I look forward to when OXO approaches me to develop a recipe for their Cookies for Kids’ Cancer program.
I don’t get paid for this work, but I willingly give my time and resources to help fund the search for a cure. It’s a very little thing I can do to help others, and I am honored to be afforded this opportunity for the 3rd year.
What is Cookies for Kids’ Cancer?
Cookies for Kids’ Cancer was founded by two OXOnians (OXO employees) who were inspired by their son Liam’s battle with pediatric cancer, a disease which claims the lives of more children in the US than any other disease. Cookies for Kids’ Cancer provides inspiration and support to allow anyone to easily get involved in fundraising to find a cure for pediatric cancer.
You can help out, too! By purchasing OXO products with the special green emblem, OXO will donate part of the proceeds toward supporting pediatric cancer research, up to $100,000*. Isn’t it nice to know that the kitchen tools you love and would buy anyway can do double-duty by helping someone else out?
I needed to up my game this year, being the 3rd time I’ve participated, and I immediately was drawn to the peanut butter-chocolate combination. I have a lot of brownie recipes on here already, but nothing like this. Peanut butter is mixed in with the batter for an extra layer of flavor, and the mini Reese’s peanut butter cups on the top make your inner child weep with joy. This is what makes being a grown up worth it all.

The cake pan is one of my new favorite baking pans (you might have noticed it in my Bacon Ranch Twice Baked Potato post the other day). It’s my first 9×13 metal pan and it won’t be my last!!! The brownie spatula is just perfect for easing those fudgy squares out of the pan without making a mess of things. And as for the baker’s dusting wand? It’s magical, creating the perfect flurry of sugary snow for all your dessert needs. I am a lucky lady!

Peanut Butter Cup Brownies
Ingredients
- 1/2 cup 8 Tablespoons unsalted butter, cut up
- 1/2 cup creamy peanut butter
- 8 ounces unsweetened baking chocolate chopped roughly
- 1 cup granulated sugar
- 2 cups light brown sugar lightly packed
- 5 large eggs
- 1 Tablespoon vanilla extract
- 1 teaspoon fine sea salt
- 1½ cups all-purpose flour
- 8 ounces Reese's Peanut Butter Cups Minis
Instructions
- Preheat oven to 350 degrees Fahrenheit. Grease a 9×13 baking dish, line with parchment paper, and set aside.
- In a microwave safe bowl, heat the butter, peanut butter, chocolate at 50% power for 30 second intervals, stirring in between, until the chocolate is all melted (this is slow going, but it keeps you from accidentally seizing the chocolate). Set aside.
- In the bowl of a stand mixer, combine the sugars, eggs, and vanilla extract. Beat at medium speed for 3-5 minutes, or until lifting the paddle from the bowl produces distinct ribbons.
- On low speed, beat in the slightly cooled melted chocolate.
- Add the salt and flour, mixing only until just combined.
- Remove bowl from mixer and spread into the prepared baking dish; bake for 30 minutes.
- Sprinkle mini peanut butter cups over the top and bake for an additional 10 minutes, or until a toothpick inserted in the center comes out with crumbs on it.
