For the final day of the #PepperParty, I decided to make a variation of my friend’s Paleo Bacon Chili. Hers is already pretty darn good, but she can’t eat peppers–the horror!!!–so mine, of course, features these beauties. Before we get to that, let’s see what else is out on the table today:

Yummy! Now this chili is a little different than what you’re used to. There are a lot of vegetables and no beans. Which is weird to me since I’ve always had beans in chili, even when I didn’t really like beans. My son still doesn’t enjoy them, so he declared this chili the champion in our household. It’s also pretty mild–again, feeding kids here–so feel free to kick up the spice a notch, if so desired.
Thank you for joining us this week in the #PepperParty! I’ve really enjoyed going outside my comfort zone a bit to bring you some main courses and work on my cooking a little bit more. Perhaps I can cook and bake, after all!
