“And …I said YESSSSS!”
It happened one November midnight, in Twitterverse, we saw this tweet from our dear Nelly… Without missing a beat, we all knew Nelly had “said YES” to her beloved “M”, as she sweetly calls Brian Murray, her fiancé.
So here we are, Nelly dear, your friends in the food world, wishing you and Brian, all the best. And with our wishes, a simple recipe with an easy formula for a life of bliss, rich with EVERYTHING in it!
BLOGGERS’ RECIPE FOR NELLY’S WEDDED BLISS
Mix together: A lot of Love, Patience, Perseverance, Respect, Courage, Strength, Trust, Kindness, Honesty, Compromise & Great Sex.
Stir in : Equal Parts of Love, Support, Faith, Fidelity, Hope, Validation, Friendship, Forgiveness, Communication.
Cook over slow simmer for the rest of your life. Dot daily with a Sense of Humor.
Leave out the nagging, sarcasm, skepticism, doubts and stubbornness.
Serving Suggestions: Best prepared daily. Serve with flourish because Married Life is a FEAST. Live it with flavor, spice it with unconditional love, enjoy its richness.
Recipe Notes: Some ingredients won’t always be fresh or available. Or the heat may flare up and the anger spills over. Simmer down and douse the flames with all the LOVE you can throw in.

What a lucky girl, too, for Saturday is her BIG day! Nelly’s getting married!
This past May, my husband and I celebrated our 10th wedding anniversary. In August, we passed the 16-year mark for our dating anniversary. So what words of wisdom can I offer you, Nelly, on the eve of your nuptials?
- Set aside time for just the two of you, one-on-one, with no distractions. This is easier to achieve before children, but if you do decide to have them, it becomes a necessity. You must nurture the couple to keep the love alive.
- Everybody makes mistakes; those mistakes don’t have to define us. Learn to forgive and let go and just about every problem you’ll come across in your marriage will be covered.

It would have been wonderful if we all could have gotten together and thrown a real shower for Nelly. Seeing as her love spreads worldwide, we had to settle for a virtual version instead. This is for you!
I really wanted to combine bananas, Nutella, bacon, and chocolate into a delicious treat fitting of the guest of honor. Nelly has a bit of a reputation with these ingredients. Instead, she’ll have to settle for the flavors of Nutella, bacon, and chocolate–I hope that’s okay! And if not, she could always try sprinkling crumbled banana chips over the top. 🙂
Bacon Frangelico Toffee
Ingredients
- 12 ounces 3/4 pound Hormel Black Label Bacon
- 12 ounces 3/4 pound Hormel Black Label Bacon
- 4 1/2 ounces Kerrygold Unsalted Irish Butter roughly; see below
- 4 1/2 ounces Kerrygold Unsalted Irish Butter roughly; see below
- 1 cup granulated sugar
- 1 cup granulated sugar
- 5 Tablespoons warm water
- 5 Tablespoons warm water
- 2 Tablespoons Frangelico hazelnut liqueur
- 2 Tablespoons Frangelico hazelnut liqueur
- 1 1/2 cups Guittard milk chocolate chips
Instructions
- Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil, grease it, and set aside.
- Line another baking sheet with aluminum foil and arrange the slices of bacon evenly on it.
- Bake for 20 minutes, or until nice and crispy.
- Place bacon on a paper towel-lined plate to drain.
- Measure out bacon fat and add to it enough butter to equal 8 ounces all together (in my case, I had 3 1/2 ounces bacon fat, so I only needed 4 1/2 ounces of butter).
- Crumble up bacon and set aside. (I used my kitchen shears to cut it up finely.)
- In a large, heavy-bottomed pan, combine the bacon fat, butter, sugar, and warm water. Attach a calibrated candy thermometer and cook over medium heat until it reaches hard crack stage (about 30 minutes), stirring constantly with a silicone spatula. You can use a silicone brush dipped in water to try to wash down sugar crystals from the sides of the pan in the first few minutes of cooking, but try not to scrape too much after that to prevent crystallization.
- Once the mixture has reached hard crack stage, remove from heat immediately.
- Remove the candy thermometer and add to the mixture about half the bacon crumbles and the Frangelico. It will bubble up once the Frangelico is added--be careful!
- Stir until the foaming mostly stops, then spread in the prepared baking sheet.
- Sprinkle the chocolate chips over the top and let sit for a few minutes.
- Spread the melted chocolate chips over the top of the toffee and sprinkle over it the remaining bacon crumbles.
- Let sit until chocolate is set, then break into pieces. (I was impatient and popped the sheet into the fridge to set.)
- Store in an airtight container in the refrigerator for up to one week.

Oh my goodness. I just happened to have finished making 11 pounds of my own brown sugar cured bacon. You realize this will now HAVE to happen. Again, OH MY!

Yes Please! Chocolate & Bacon… Enough said. My wife Kate and I also celebrated our 10 year anniversary this year. Your words of advice were well said and have worked for us. We try to go out on a date night, alone no kids at least once a month.
