  2. Lime and coconut is one of my favorite combinations. Interesting that they turned biscuity. That might make them good accompaniments to a Caribbean style stew!

    • They still had a muffin texture, but for some reason, the taste reminded me of a biscuit. Like I said, it could just be because I knew the self-rising flour was in it and that’s the only other thing I’ve used it for. I loved them, all the same.

    Also? So envious of your amazing baking cup collection. I don’t tend to use them, but then I see all your pretty cups and it makes me want to start! Lovely! xo

    • I prefer baking in my silicone muffin pans, but one of them tore and I can’t track down the same brand anymore, so I started using the paper liners again in my stoneware muffin pan. Thanks!

  6. You know I finally bought coconut oil and couldn’t believe I forgot to use it for these muffins! I also thought about using coconut milk but only after I already mixed in my yogurt LOL. No worries though for I’ll be baking these again. Your muffins look great.

    Delicious! I added in the lime and lemon juice from the zested fruit & put in some crushed hemp seed to add in extra fibre.
