There truly is a holiday for everything. Friday was National Granola Bar Day. My kids celebrated by eating a ridiculous amount of them. I don’t want to talk about it. Saturday was National Blonde Brownies Day. I made some Bourbon Pecan Blondies in honor of it, but they haven’t cooperated with my photog attempts. Damn those drunken bars! And Sunday was National Pie Day–which is not to be mistaken with Pi Day, which is 3.14 (March 14th).
This was to be a celebration of pie in any way, shape, or form–but I was a little busy trying to do my homework in front of the fire at Panera Bread… and falling asleep in public. Nothing like waking up to see people staring at you with smiles on their faces. Darn that relaxing atmosphere! I hope I wasn’t snoring! In any case, after that and running my errands, I didn’t get home until 9:30PM–a little late to be starting a pie endeavor–especially since I still had homework to finish.
The next best thing is an easy no-bake option. Granted, these usually fall under the category of cheesecake in my book, but since this blog called theirs Peanut Butter Pie, I’m giving it a pass this time and letting it qualify. Beggars can’t be choosers at the last minute.
Be careful about giving in to the temptation to save calories. Generally, light cream cheese won’t set as well and you can forget about fat-free “cream cheese” (which isn’t anything resembling cream cheese anyway). Light Cool Whip, however, is a substitution you can usually get away with.
