Remember when I said I have a bit of a baking addiction? Yeah… 3 days into the winter break and I have made: vanilla wafers, graham crackers, marshmallows, Captain Morgan coconut fudge, banana coffee cake with chocolate chip streusel, and the brioche dough for banana bourbon cinnamon rolls. Plus frozen chocolate covered banana bites for my son’s preschool Christmas party. Um….yeah. I don’t know what to say. I can’t help myself.
If you’d like to replicate what’s in my photo above, you’ll need these recipes:
- Corn-Syrup-Free Marshmallows from Baked by Anna (I substituted raw blue agave nectar for the honey and skipped the cornstarch, using all powdered sugar)
- Graham Crackers from life as a h4 (I substituted the scrapings from 2 vanilla beans for the vanilla extract)
- Captain Morgan Coconut Fudge from Steph Chows (no substitutions here, though I would toast the coconut next time; I did heat the sweetened condensed milk mixed with the chocolate in the microwave at 50% power, stirring every 30-60 seconds to prevent seizing, instead of on the stove)
Luckily, most of the booty is going elsewhere. That’s the best part of the baking process–giving it away and making other people happy. Because we all know I won’t be too happy if I eat it all myself. Especially when I outgrow the one pair of jeans I have left that fit somewhat okay. No, that’ll be a sad day indeed.
Stay tuned… next Monday will be a big Christmas cookie bake day with my sister. And I’m sure I’ll find more neurotic baking to do. At least it keeps me out of trouble…
