Basic Buttercream

Everybody needs a basic frosting to go to when they want to whip up a fast cake. This is highly adaptable yet also delicious in its bare bones state.
  • 1 cup (16 Tablespoons) unsalted butter, softened (I prefer Kerrygold)
  • 2 teaspoons vanilla extract
  • ¼ teaspoon kosher salt
  • 4 cups confectioners sugar
  • 3 Tablespoons organic half and half
  1. Cut the softened butter into chunks and beat in the bowl of a stand mixer on medium speed for 4 minutes or so.
  2. Scrape down the sides of the bowl and add the vanilla, salt, and sugar.
  3. Cover the bowl (or put the splash guard on) and slowly turn on the mixer, then beat until well incorporated.
  4. Slowly beat in the half and half until you've reached the desired consistency (you can do slightly less or more, if you prefer).
  5. If adding color, add it while the mixer is going to evenly distribute.
