Wilted Spinach with Walnuts and Goat Cheese

  • ½ cup walnut halves
  • 1 Tablespoon extra virgin olive oil
  • 3 cloves garlic, minced
  • 8-10 ounces fresh baby spinach
  • 1 Tablespoon fresh lemon juice
  • ¼ cup crumbled goat cheese (chèvre)
  1. Place an 11.5" skillet over medium heat and add the walnuts to the pan. Toss frequently until the walnuts begin to be fragrant.
  2. Add the olive oil and garlic and stir for 20-30 seconds.
  3. Add the spinach and lemon juice and toss to coat evenly, sauteing until the spinach wilts.
  4. Remove from heat, sprinkle goat cheese over the top, and serve immediately.
