Chocolate Pecan Pie Energy Bites

  • 1 cup pecan halves
  • 1 cup pitted dates
  • 1½ Tablespoons Divine Cocoa Powder
  • 1 Tablespoon maple syrup
  • 2 teaspoons coconut oil
  1. In a food processor fitted with the chopping blade, pulse the pecan halves until finely ground, but not yet a paste.
  2. Add the remaining ingredients and pulse until they start coming together loosely.
  3. Using a #60 cookie scoop, scoop out portions of the mixture into your hand and roll tightly into balls.
  4. Refrigerate for 30 minutes to firm up before enjoying.
  5. Store in the refrigerator for up to a week.
