Pizza Hummus Biscuit Waffles

  • 1 16.3-ounce tube large refrigerated biscuits (8 biscuits)
  • 4 ounces Sabra Pizza Flavored Hummus
  • ⅓ cup jarred or canned pizza sauce
  • 16 slices pepperoni
  • ½ cup shredded Italian cheese blend
  1. Plug in waffle iron to preheat.
  2. Slice each biscuit in half across the middle, so they're like sandwich buns.
  3. Spread 1 Tablespoon hummus on the bottom half of each biscuit.
  4. Drop 2 teaspoons pizza sauce on top of the hummus on each biscuit.
  5. Lay 2 slices pepperoni on each biscuit.
  6. Sprinkle 1 Tablespoon cheese on each biscuit.
  7. Fold over and bake in waffle iron per manufacturer's directions until golden brown (in my case, place 2 in waffle iron at a time, pull the top down and clamp it shut, then check on the waffles when it starts steaming).
  8. Eat immediately, or refrigerate and pack in lunch box with an ice pack for school lunch.
