Piña Colada Smoothie

  • 1 fresh pineapple
  • ½ cup canned light coconut milk (shake well before opening the can)
  • 1 Tablespoon extra virgin coconut oil (the less processed kind)
  • ½ teaspoon vanilla extract
  • 1 Davidson's Safest Choice Pasteurized egg
  1. Chop the top and bottom off the pineapple, then cut the skin off.
  2. Cut the flesh off around the core, chop, and throw into your blender.
  3. Add the coconut milk, coconut oil, vanilla, and egg to the blender.
  4. Puree until smooth (it may take a couple minutes).
  5. Pour into 2 chilled glasses and serve immediately.
For an even more refreshing smoothie, freeze the pineapple chunks before using them.
