I love traditions, but sometimes you have to shake things up a bit, and your holiday ham is a great place to start. Everyone and his mother has had the traditional honey ham or brown sugar-glazed ham with pineapple rings skewered across every inch of flesh. And that’s fine and well, but why not be a little more adventurous? Try something new this year, like my Hoisin Glazed Jones Bone-In Ham. It’s spicy, it’s complex, it reminds you a little of barbecue and Chinese food, but subtly, so it doesn’t overpower your palate, taking over the meal. It’s the perfect way to merge old with new and everyone at your table will love it!

Hoisin Glazed Bone-In Ham

Ingredients
  • 1 Jones Dairy Farm bone-in fully cooked ham (14-18 pounds)
Glaze
  • ½ cup hoisin sauce
  • 3 Tablespoons dark brown sugar
  • 2 Tablespoons soy sauce
  • 2 Tablespoons cooking sherry
  • ¾ teaspoon minced garlic
  • ½ teaspoon Chinese five spice
Instructions
  1. Preheat oven or electric roaster to 300 degrees Fahrenheit.
  2. Place ham on a rack inside the roasting pan with the fat side up and cover. Cook for 12-15 min per pound. (3-4.5 hours, depending on the size of the ham.)
  3. About 45 minutes before the ham will be done, remove it from the roasting pan to a large cutting board and remove the skin.
  4. Cut the flesh in a diamond-pattern about a half inch into the flesh to help the glaze get into the ham.
  5. In a 2-cup liquid measuring cup, whisk together the glaze ingredients.
  6. Return the ham to roasting pan and brush on ⅓ of the glaze. 15 minutes later, brush on another ⅓ glaze.
  7. Pour the last of the glaze on when there are 15 minutes left.
  8. Remove from roasting pan to a large cutting board and let sit 15 minutes before cutting
