#PepperParty Day 3: Bacon Chili with Peppers

 

Bacon Chili with PeppersFor the final day of the #PepperParty, I decided to make a variation of my friend’s Paleo Bacon Chili. Hers is already pretty darn good, but she can’t eat peppers–the horror!!!–so mine, of course, features these beauties. Before we get to that, let’s see what else is out on the table today:

Bacon Chili with PeppersYummy! Now this chili is a little different than what you’re used to. There are a lot of vegetables and no beans. Which is weird to me since I’ve always had beans in chili, even when I didn’t really like beans. My son still doesn’t enjoy them, so he declared this chili the champion in our household. It’s also pretty mild–again, feeding kids here–so feel free to kick up the spice a notch, if so desired.

Bacon Chili with Peppers

Bacon Chili with Peppers

Ingredients
  • 10 slices uncured, nitrate-free bacon, diced
  • 1 pound grass-fed ground beef
  • 1 medium Vidalia onion, diced
  • 2 garlic cloves, minced or pressed
  • 2 medium celery stalks, chopped
  • 2 medium carrots, chopped
  • 6-7 mini sweet bell peppers, chopped
  • 1 14-ounce can diced fire roasted tomatoes
  • 1 6-ounce can tomato paste, plus ½ can water
  • 1½ Tablespoon chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons cumin
  • 1 teaspoon Maldon salt
  • 2 Tablespoons fresh cilantro, chopped
Instructions
  1. In a large saute pan, heat the bacon over medium to medium-high heat, stirring often.
  2. Once the bacon gets brown and starts to crisp, add the ground beef and onion. Cook until the onions start getting translucent, stirring often.
  3. Add the garlic, celery, carrots, and bell peppers, cooking for 5 minutes, stirring often.
  4. Stir in the tomatoes (undrained), tomato paste, and water. Add the seasonings except for the cilantro.
  5. Simmer for 20 minutes uncovered.
  6. Stir in the cilantro and cook for 2 more minutes before serving.
